Instructions

For the Pasta-

Step 1
create a mound of flour and make a small "volcano" opening at the top with your hands

then crack the eggs into the middle of the opening

then slowly combine the flour and eggs together

kneed the dough mixture until it is smooth (should take about 20 mins by hand)

roll the dough out into a large triangle with a rolling pin or if you have a stand mixer with an attachment, you can use that as well

For the Ricotta

combine ricotta with salt, pepper, lemon zest, and ginger

mix together

then in a pasty bag, spoon the ricotta mixture inside

on the pasta sheet, start placing small portions of the cream on the top

then fold over to create a "sandwich" between the sheet of pasta and the ricotta cream

you can use a knife or a ravioli cutter to cut along the sides of the pasta to create small squares

throw the pasta into salted and boiling water for a few seconds

the pasta will become soft and this is how you will know that it is ready to tale out

For the Pea Cream

in a sauce pot, throw in butter, olive oil, and onions Then add sliced potatoes in

saute together and add ginger

then add fresh or frozen peas and cook together

with a hand mixture, blend together until it becomes smooth

over a fine mesh strainer, put the peas cream in and press down with a spoon with a bowl underneath. This will ensure that you will have the smoothest consistency possible

For the Finale

on a large plate, place the pea cream in the center and spread out gently
