Instructions

Step 1
Melt the butter in a large pan and sauté the garlic and onion for 2-3 minutes, stirring.
Step 2
Add the spices and cook for a further 30 seconds.

Stir in the tomatoes, red lentils, lemon juice, vegetable stock, and coconut milk and bring to a boil.
Step 4
Reduce the heat and simmer for 25-30 minutes until the lentils are tender and cooked.
Step 5
Season to taste and spoon the soup into a warm tureen.
Step 6
Garnish and serve with warm naan bread.

Tips:

Step 7
You can buy cans of coconut milk from stores and delicatessens. It can also be made by grating creamed coconut, which comes in the form of a solid bar, and mixing it with water.
Step 8
Add small quantities of hot water to the pan whilst the lentils are cooking if they begin to absorb too much of the liquid.
