Instructions

Step 1
Preheat oven to 425⁰.
Step 2
Cut carrots diagonally into 1" pieces. Spread evenly on the bottom of a 13x9 pan.
Step 3
Scatter onion slices and olives over carrots.
Step 4
Stir together cumin, salt, cinnamon, and turmeric. Sprinkle half over vegetables.
Step 5
Place chicken thighs on top of vegetables. Rub spice onto chicken. Turn chicken thighs skin side up. Tuck in lemon halves.
Step 6
Add water to pan. Bake approximately 55-60 minutes, until chicken skin is brown and crisp.
