Step 1
1. Whisk together 2 eggs, tablespoon of milk, salt and pepper in a bowl.
2. Cut bell pepper and onion to thin slices and add to whisked eggs.
3. Heat your pan on medium heat and drizzle your olive oil.
4. Thinly slice 3/4 of your tomato and spread them out on the pan.
5. Sprinkle a bit of salt and pepper on your tomatoes and flip them over.
6. Pour egg mixture of top and let cook for about two minutes before covering.
7. Uncover, serve and enjoy.
