Instructions
Step 1
Place onion, green pepper, and jalapeno peppers in a large sauce pan and saute over medium heat for 7 to 8 minutes.
Step 2
Add 1 to 2 tablespoons of water at a time to keep veggies from sticking to the pan.
Step 3
Add garlic and cumin and cook for 2 minutes .
Step 4
Add tomatoes, beans, and veggie stock and bring to a boil over high heat.
Step 5
Reduce heat to medium and cook covered for 25 minutes. Add lime juice and cilantro and season with salt.
