Hummus Bi Tahini

I was taught this recipe by my university teacher Michael Koziol (DPhil and Chef). I've been making it for more than ten years, and it is my go-to hummus recipe.

Ingredients
6 servings

200gcan of chickpeas
drained weight

1garlic clove

1 Tbsplemon juice

½ tspsalt

¼ tspblack pepper
freshly-ground is preferred

¼ tspground cumin

1 Tbsptahini paste

2 Tbspextra virgin olive oil
6 Tbspliquid
drained, from the chickpea can

fresh parsley
to garnish

paprika
to garnish

olive oil
to garnish
2whole chickpeas from the can
to garnish
Instructions
Step 1
Blend everything except for the garnish ingredients.
Step 2
Serve on a plate or bowl. Drizzle with olive oil, sprinkle with paprika, and fresh parsley. Decorate with the whole chickpeas.
