Step 1
Heat vegetable oil in a skillet over medium heat. Add frozen diced potatoes and cook until heated through, about 8 minutes. In a separate skillet cook beef and drain. Stir in chili powder and cook 30 seconds. Stir in salsa and corn. Bring just to a simmer. Make four spots on the bare skillet for the eggs. Break eggs into spots. Cover and simmer over medium-low until eggs have cooked, about 7-9 minutes. Serve with tortillas.
