Step 1
● Wash, dry and Cut Okra (don't make the slices too thin or thick)
Step 2
● Dice the onion/s.
Step 3
● Slit the chillies down the middle.
Cook
Step 4
● Pour some cooking oil (sunflower) in a Non-stick frying pan on medium heat. Don't be stingy with the oil. It helps with the frying and stickiness of the Okra.
Step 5
● Add the onions, chillies and haldi powder.
Step 6
● Sorte it a bit till the onions become soft and translucent.
Step 7
● Add the Okra and stir a bit.
Step 8
● Once stirred, cover with lid and leave on low heat.
Step 9
● Stir it well ever once in a while every few mins or so. (Don't forget to replace the lid. And to knock back the the okra that will stick to your spoon, or whatever stirring utensil you use, and try to escape
Step 10
● Eventually you will wonder why it takes so long. At this point you will also notice the quantity of Okra seems to have reduced significantly and that there are a few dark brown/dark green okra in the mix.
Step 11
● Now give into your frustration and remove the lid, put the flame on borderline medium heat
Step 12
● Stir the Okra around as you hear the water content vaporize with a sizzle. Just like all the plans you had made for the day because this took longer than you expected.
Step 13
● Stir a bit more and add the Salt.
Step 14
● Now become the physical manifestation of the definition of insanity, as you stir to make sure the salt has been incorporated well and about half or more of the Okra is dark brown/dark green.
Step 15
● Turn off the heat. And That's about it.
