Instructions

Day 1: Homemade Tortillas

Step 1
Stir flour and salt together

Mix in shortening until it resembles crumbs

Add enough water to make the dough stiff

Form dough into a smooth ball (1.5-inch ball)

Roll ball between 2 sheets of wax paper until tortilla is as thin as possible (1/8 inch)

Lightly grease a fry pan and cook over medium heat

Cook each tortilla for 1-2 minutes (golden brown)

Day 2: Huevos Rancheros

Place tortillas into a low, warm oven to heat through

Fry onions in a saucepan with oil

Add chilli powder and canned tomatoes, cook for 1 minute

Add garlic and cook for at least 10 minutes for the sauce to reduce

Fry eggs sunny side up

Serve by placing tortillas on each plate, add eggs, cover with sauce and sprinkle with cheese and cilantro
