Delicious South Indian style mix vegetable kurma that’s flavor-packed, amazingly delicious and easy to make. Serve with flavored rice, roti, poori, paratha or naan for a special meal. Korma, also known as kurma is an aromatic Indian gravy dish made with yogurt, nuts, seeds, spices, onions, coconut & a main ingredient like meat or vegetables.

Instructions

Step 1
1. Add two table spoon of ghee and 4 tablespoon of cooking oil in a hot pot.

2. Add 2 cinnamon sticks and 3-4 pieces of star anise. Sauté until there’s aroma.
Step 3
3. Chop the onions into slices and add into the pot. Sauté till the onions turn golden brown.
Step 4
4. Add 2 green chillis, 2 red chillis and sauté for 1 minute.
Step 5
5. Slice the tomatoes and preferred vegetables (potatoes, carrot, peas, beans, cauliflower). Put these ingredients into the hot pot and sauté for three minutes.

6. Close the cover of the pot for 3 minutes for the masala to soak into the vegetables.
Step 7
7. After 3 minutes, pour in a cup of coconut milk and stir well until evenly mixed.
Step 8
8. Add 1 glass of water and stir well.
Step 9
9. Add a teaspoon of salt and tablespoon of sugar. Stir well.
Step 10
10. Close the pot and let the vegetables to cook together with gravy. Ensure that the heat is set to the lowest.
Step 11
11. Once vegetable is well cooked, add 1/2 glass of water, 1 teaspoon of salt and sugar.
Step 12
12. The gravy is ready to be served with rice or bread of your choice.
