Chaat Masala Sandwich by UpbeetAnisha
Give me chickpeas, give me spices, give me bread and I’m happy. Romanticizing lunch time pt. 1! Lunch is usually the meal I eat by myself, sometimes at odd times of the day, so I like coming back to simple no-cook meals that satisfy. Anything with chaat masala is satisfying, so here you go.
1 can chickpeas
1/2 red onion
1/2 cup chopped cilantro
1 tbsp vegan mayo (optional, possibly sub yogurt!)
1 tsp dijon mustard
1 tbsp nutritional yeast
1/2 tsp red chili powder
1/2 tsp turmeric
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp black pepper
1 tsp chaat masala (or more, we are liberal with this one)
1/2 tbsp lemon juice
salt to taste
For the rest of the sandwich: 1/2 avocado, greens of choice, tomato (or no tomato, because some people are anti-tomato-in-sandwich and I get that)
Smash half the can of chickpeas and leave the rest of the chickpeas whole. Then just add everything else and mix. You can get creative with what spices/condiments you add; sometimes I add some tahini or a little hot sauce. Eat on its own or build a sandwich!
