This zesty Middle Eastern potato salad is so delicious it’s a must try, it’s so easy to make and it contains no mayo! The perfect side dish when your grilling.

½ tablespoonsalt
for boiling the potatoes
1red onion
small
1red bell pepper
Dill
or as much as you want
Parsley
or as much as you want
⅓ cupextra virgin olive oil
1 tablespoonlemon zest
1the juice of lemon
1 tablespoonstone ground mustard
optional
1 teaspoonsalt
½ teaspoongarlic powder
½ teaspoonblack pepper
Instructions
Step 1
1. Peel, wash and dice the potatoes into large cubes, put them in a pot cover with cold water add salt and boil until fork tender
Step 2
2. While the potatoes are boiling wash and cut the red onion, red bell pepper, parsley and dill and set them aside
Step 3
3. Make the vinaigrette In a large bowl mix together the extra virgin olive oil, lemon zest, lemon juice, stone ground mustard, salt, garlic powder and black pepper
Step 4
4. Once the potatoes are done drain them then add them to the vinaigrette. Then add the chopped Red onion, bell pepper, parsley and dill toss everything together really well and enjoy!!!
