Step 1
Cut the apples into bite-size pieces and toss in the kimchi puree you can do this up too 6 hours in advance
Step 2
Combine labne and maple syrup in a bowl and whisk together till married
Step 3
Heat a pan on low slowly render guanciale till nice and crisp set on a paper towel-lined tray to drain the remaining grease
Step 4
Right before your plate toss arugula in oil and a large pinch of salt and pepper
Step 5
Plop a dollop of maple labne on plate add about a quarter of the kimchi apples lay 4-5 slices of guanciale over the apples then drop a hand full of the dressed arugula finish with a pinch of fresh pepper
