Step 1
Cube the potatoes and cook in a large skillet with oil, pepper, season salt, and Cajun seasoning until they begin to soften/brown

While the potatoes cook, dice your peppers and onions

Once the potatoes are nearly cooked add the peppers and onions with the potatoes along with red pepper flakes

Chop bacon into bits and place in another medium skillet with pepper

While you wait for the bacon to cook, whisk together eggs, a dash of milk, salt, pepper, and hot sauce in a bowl

Once the potatoe mix is cooked soft and charred place in the bottom of your serving bowls

Once the bacon is cooked, dry the bits on a paper town on the side. Keep the grease in the pan for the next step

Add your egg mixture to the skillet with the bacon grease and top with cheese

Allow the bottom half of the egg to cook until white appears on the sides. Sprinkle the diced tomatoes and the cooked bacon bits to the top as evenly as possible. Top with a lid to make both sides begin to solidify

Fold the egg in half with a spatula forming an omelet. It might be easier to cut the inlet in half and fold both sides separately. Cook until all clear egg has solidified into yellow or white and flip over to brown both sides If it breaks apart I promise it will not ruin the taste!

Place the cooked omelette on top of your potatoes in your serving bowls. Top with green onion and sour cream. And serve!
