¼ cupextra-virgin olive oil
¼ cupfresh lemon juice
3garlic cloves

1 teaspoondijon mustard
1 teaspoonItalian seasoning
or za'atar
1 teaspoonsea salt
¼ teaspoonground cumin
freshly ground black pepper
Salad
2 ½ cupsFrench green lentils
cooked
3Persian cucumbers
thinly sliced into half-moons
¾ cupyellow grape tomatoes
halved
½ cupred onion
diced
4 leaveslacinato kale
stemmed, leaves torn
4red radishes
thinly sliced
½ cupcrumbled feta cheese

½ cupgreen olives
pitted and halved
¼ cupfresh parsley
chopped
¼ cupfresh mint leaves
Instructions
Step 1
Make the dressing: In a large bowl, whisk together the olive oil, lemon juice, garlic, mustard, Italian seasoning, salt, cumin, and several grinds of pepper.
Step 2
Assemble the salad: Add the lentils, cucumbers, tomatoes, red onion, kale, radishes, feta, and olives to the bowl with the dressing and toss to coat. Add the parsley and mint and toss again. Season to taste and serve.
