Jamaican-Inspired Chicken Tacos with Pineapple Salsa
JAMAICAN-INSPIRED CHICKEN TACOS with pineapple salsa 🍍BTW you don’t need a pressure cooker to make these - you can simmer on the stove for 40 minutes and then shred the chicken OR slow cook for 3 hours.

Ingredients
8 servings
🌮CHICKEN TACOS
Avocado oil
1white onion
medium, chopped
Kosher salt
1 cupchicken broth
2 Tbspjerk seasoning

4chicken breasts
Corn tortillas
charred if preferred
Guacamole
to taste
radishes
Sliced, for garnish, to taste
1 recipepineapple salsa
🍍PINEAPPLE SALSA
Instructions
Step 1
Add 2 swirls of oil to a pot on medium heat. Sauté the onion for 5-7 minutes until fragrant. Season with a pinch of kosher salt.
Step 2
Pour the chicken broth into the pot.
Step 3
Add the chicken and jerk seasoning and mix together until the chicken are fully coated in seasoning and submerged as much as possible.
Step 4
Pressure cook on high for 20 minutes.
Step 5
Make the pineapple salsa by combining all of the ingredients and mixing. Adjust seasoning to taste.
Step 6
Release the pressure, then shred the chicken using 2 forks. Allow the shredded chicken to sit in the liquid for at least 10 minutes to absorb more flavor.
Step 7
Build the tacos by spreading guacamole first, then adding chicken on top. Top with pineapple salsa and radish slices.
