Ingredients
2 servings
oil
1red onion
3cloves garlic
1 Tbspginger
1chilli
300gsweet potatoes
1tin coconut milk
coriander
1tin chickpeas
Brown sugar
1lime
Red thai curry paste
Instructions
Red Thai Curry Paste
Step 1
Lightly toast peppercorns, cumin and coriander then pestle and mortar.
Step 2
Finely chop lemongrass and spring onions. Grate the ginger.
Step 3
Blend all ingredients in a food processor until smooth.
Sweet Potato Curry
Step 4
Chop onions and gently saute in oil.
Step 5
Finely dice chillies, grate ginger and crush garlic. Add to onions.
Step 6
Dice sweet potato - if making a large quantity, lightly parboil, or just add directly into the curry.
Step 7
Add red thai curry paste, coconut milk, sugar and chickpeas, bring to a boil and simmer until chickpeas and sweet potato are tender and flavourful.
Step 8
Add the zest and juice of the lime, adjust the seasoning and serve over rice with special naan. Top with a sprinkle of coriander and yoghurt if desired.
