Cod
Crust

chorizo

65gwhite bread
without crusts

2 clovesgarlic
sliced

0.5lime
zest

15gflat leaf parsley

salt

black pepper

Instructions
Step 1
sprinkle thick cod fillets with lime juice and chill.


Step 2
Slice chorizo, fry for 3-4 mins until juices run. Add ripped up, crustless white bread. Fry for 3 mins to soak up juice. Allow to cool.


Step 3
Transfer to food processor and blitz to crumbs. Add sliced cloves of garlic, lime zest, flat parsley, salt and pepper. Blitz again.





Step 4
Lightly oil baking tray. Fish skin side down, cover with mix, press down.
Step 5
Oven 180°C for 18 mins
Step 6
Serve with smashed paprika potatoes, tender stem broccoli, and tartar sauce.
