Instructions

Step 1
1. Preheat oven to 350F 2. Line a muffin tin with parchment paper or foil cups 3. Chop onion, mushrooms, and bell pepper 4. Heat avocado oil in a pan 5. Saute spinach with 1 tsp salt until wilted; set aside to strain out liquid 6. Saute onion, mushrooms, and bell pepper with 1.5 tsp salt 7. Distribute spinach and veggies evenly across muffin cups 8. Pour egg whites over the veggies 9. Bake for 30 minutes or until egg whites are set
