Instructions
Step 1
Heat oil in frying pan. In separate pot, fill with water and bring to a boil to steam broccoli and carrot
Step 2
In frying pan, cook onions, sweet peppers, and red pepper flakes until onions and peppers change colors. Add cooked white rice and stir, let sit.
Step 3
Once pot of water is boiling, set carrots and broccoli in a steamer basket and steam vegetables for 4-5 minutes.
Step 4
In frying pan, season with pepper, garlic powder, and any other seasonings you like. Stir and let cook for a couple minutes, then add ponzu sauce and let stir. Let rice brown and flip occasionally before adding green onion.
Step 5
Remove steamed vegetables from pot once finished cooking. Separate broccoli and carrots. Toss broccoli with garlic salt and lemon juice; incorporate carrots into fried rice before plating.
Step 6
Place rice in bowl and set broccoli on top of half of the rice (leave other half available for egg).
Step 7
Crack egg into non-stick frying pan and cook egg how you like (add oil beforehand if needed). Season with salt and pepper. Place cooked egg on remaining half of rice. Enjoy!
