Instructions
Step 1
In a vessel saute chopped onion in oil until golden brown.
Step 2
Add tomatoes and Vindaloo paste and sauté for a few minutes.
NOTE: Per Greg, try with perhaps only two tomatoes or use Roma tomatoes which would be less watery.
Step 3
Add chicken pieces and cook for a few minutes.
Step 4
Simmer covered for 10-15 minutes or until the chicken is cooked through and the sauce is well-melded and concentrated.
Step 5
Serve over Jasmine rice and garnish with lime slices and cilantro.
