Ingredients
4 servings

1 tsppeanut oil

1zucchini
medium, small dice

4mushrooms
medium, small dice

1red bell pepper
medium, small dice

470gchicken
diced or mince

2garlic cloves
crushed

1 tspginger
finely grated

800gthin egg noodles
cooked

cilantro
for garnish

2 tsptoasted sesame seeds

1red chili
finely diced

2 tsprice wine vinegar

1 ½ Tbsptamari

2 Tbspoyster sauce

½ tspbrown sugar
Instructions
Step 1
Add all dressing ingredients to a small bowl and mix well until sugar is dissolved. Set aside






Step 2
Heat a wok or frying pan over high heat and add oil. Add the zucchini, mushrooms, and bell pepper and stir fry for 3-4 minutes until they start to soften. Add chicken and continue cooking for 8-10 minutes until cooked through. Break up mince with cooking utensil.









Step 3
Add garlic and ginger and stir fry for another 2-3 minutes.





Step 4
Add noodles and dressing to the pan and gently toss for about 2 minutes until heated through.








Step 5
Serve topped with sesame seeds and Cilantro.
