Instructions
Step 1
Heat the oil in a medium saucepan over a medium heat, add the onion and cook for 2 minutes.
Step 2
Add the garlic, carrots and swede, cook for 5 minutes.
Step 3
Add the lentils, chopped tomatoes, vegetable stock, thyme and season lightly. Bring to the boil and then reduce the heat to low and simmer for 30 minutes.
Step 4
Place the potatoes and the water in a large saucepan. Cook over a high heat until the water boils and then reduce the heat to low and cook for 20 minutes.
Step 5
Drain the potatoes and mash with the milk and butter until smooth.
Step 6
Preheat oven to 200°C/400°F/Gas Mark 6
Step 7
Spoon the cooked lentil mix into a large ovenproof dish and top with the mashed potato.
Step 8
Bake in the centre of the pre-heated oven for 30 minutes.
Step 9
To Serve: Great served with your favourite steamed vegetables.
