200grice noodles

70gchar siu

150gshrimp

25ggarlic chive
cut to 1.5 inches long

For the sauce
Instructions
Step 1
Prepare all the ingredients
Season the shrimp with salt and pepper
Lightly beat the eggs together
Cut and Slice the vegetables Slice the char siu
Mix all the ingredients for the sauce together
Step 2
Bring a pot of water to the boil
Once boiling take it of the heat and add the rice noodles to the pot leave them in to soften until they are al dente (about 5 minutes for medium sized noodles or 2 minutes for angel hair noodles) When the noodles have finnished softening spread them out to dry on a cooling rack
Step 3
Add 2 tablespoons of oil to a wok on a high heat
Once hot add the egg mix and scramble them a little
Step 4
Once the egg is no longer runny push it to 1 side and add the shrimp
Cook they off for about 2 minutes
Step 5
Then add the char siu cook for another minute mixing and tossing while it cooks
Step 6
Remove all the protein from the wok and set aside to use in a few minutes
Add 1 tablespoon of oil to the wok
Step 7
Add the onion,carrot and garlic to the wok and cook for a minute or 2
Step 8
Then add the the remaining vegetables excluding the garlic chive
After a minute or 2 add the protein back to the wok
Then add the noodles and sauce mix and toss until everything is well mixed together
Step 9
Turn of the heat before adding the garlic chive and tossing a little before plating up
Step 10
Plate up and enjoy 😋
