2fennel bulbs
thinly sliced
4pak choi
thinly sliced
2 tablespoonsvegetable oil
2 teaspoonssea salt
450gtofu
smoked, organic, cut into small cubes
2 tablespoonscornflour
100gcrunchy peanut butter
2 tablespoonssoy sauce
2 tablespoonsrice wine vinegar
2 clovesgarlic
small, finely grated
2 cmginger
grated
1red chilli
finely chopped
Instructions
Step 1
Preheat your grill to max.
Step 2
Spread out the sliced fennel and pak choi in a single layer on a large grill tray and mix with half the oil and salt.
Step 3
Toss the smoked tofu cubes with the cornflour, then with the remaining oil and salt and scatter them over the sliced fennel and pak choi.
Step 4
Transfer to the grill for 5-10 minutes.
Step 5
until the tofu is golden brown and crisp on top and the vegetables have wiited.
Step 6
Meanwhile, mix together the peanut butter, soy sauce, vinegar, garlic, ginger and chilli for the dressing.
Step 7
Taste and djust the soy sauce as needed
Step 8
Serve the grilled tofu and vegetables with the peanut dressing alongside
