Ingredients

400gpotatoes
cubed, boiled

1red pepper
cut into strips

1yellow pepper
cut into strips

1courgette
sliced

1aubergine
cubed

2red onions
quartered

1 bulbgarlic

2tomatoes
quartered

10cherry tomatoes
halved

1 packasparagus spears

1lemon
cut into wedges

250ghalloumi
vegan halloumi

2 sprigsfresh rosemary
large

12olives
large, pitted

4 Tbspextra virgin olive oil

salt

pepper

balsamic vinegar

fresh spinach

mixed italian herbs
Instructions
Step 1
Boil potatoes until soft. Drain, sprinkle with flour, onion salt, garlic salt, white pepper, black pepper, rosemary and a glug of oil.
Step 2
Arrange the vegetables and potatoes on a large baking tray
Step 3
Bake for around 30 minutes until potatoes are crispy.
Step 4
Serve topped with a handful of rocket and a drizzle of olive oil and balsamic vinegar
