Instructions
Step 1
Heat oil in a medium saucepan on high and dry noodles in 2 batches for 10 seconds each, transfer to paper towel to drain
Step 2
Place garlic, coriander stems, sugar, soy sauce, lime zest and juice, and chilli in a bowl and whisk to combine
Step 3
Place 1 Tbsp of dressing in a bowl and coat beef, cook in a pan until medium and rest for 5 minutes
Step 4
Thinly slice beef, place tomato, cucumber, shallots, mango, coriander leaves, beef and noodles in a large bowl and toss to combine. Serve immediately with remaining dressing.
