Instructions

Step 1
Mix the eggs in a bowl with 40g of the parmesan and some salt and pepper to season
Step 2
Cook the pasta till Al dente
Step 3
Fry Pancetta for a few mins until golden and crispy.
Step 4
Add the garlic and mushrooms, and fry for 2 mins
Step 5
Add the pasta to the pan and pour a splash of the pasta cooking water to the pan with it.
Step 6
Stir the pan to mix everything well.
Step 7
Remove pan from heat and add the egg mixture
Step 8
Stir gently for a few minutes until sauce looks cooked.
Step 9
Add some more pasta water to make the sauce glossy.
Step 10
Serve with the rest of the parmesan and some pepper.
