Wontons in Sesame Sauce

This is a variation on my grandmother’s recipe for wontons. I’ve improved it over the years. Served with a spicy, sweet and creamy sesame sauce rather than the traditional soy based sauce.

Ingredients
4 servings
1 lbsground pork
1 lbsshrimp
deveined
¼ cupcilantro
chopped
1 cupbok choi
chopped
3scallions
sliced
1 tablespoongrated ginger
1 tablespoongarlic
grated
1 Tbspshaoxing wine
1 tablespoondark soy sauce
1 teaspoonsesame oil
1 tablespoonssugar
1egg
1 teaspoonChinese 5 Spice
1 dashMSG
salt
to taste
white pepper
to taste
2 packagewonton wrappers
4 Tbstahini
1 Tbschili crisp
black sesame seeds
for garnish
Instructions
Step 1
Finely chop the peeled and deveined shrimp
Step 2
Combine shrimp, pork, herbs, bok choi, egg, spices and seasonings
Step 3
Prepare a wonton prepping station by setting up a bowl of water and a tray covered in rice flour to place the finished wontons on
Step 4
Wet the edges of the wrapper with your finger and place 1 tsp of the filling in the center
Step 5
Fold the wonton in half so you end up with a half moon shape. Seal shut while pressing the air out to avoid bubbles
Step 6
Create a dimple in the center of the dumpling and stretch the arms over before pinching shut. It should looks like a tortellini
Step 7
Boil immediately in hot salted water or freeze on the same tray overnight before storing in a ziplock bag
Step 8
Make a quick spicy sesame sauce by combining hot water with sesame paste and chili crisp to desired consistency before playing with hot wontons
