Instructions
Step 1
Dice potatoes and boil until fork tender.
Step 2
Chop bacon and cook in separate pan. When crispy, set aside. Save the fat.
Step 3
When potatoes are fork tender, strain and place in large mixing bowl. Take fat and pour over potatoes.
Step 4
Add corn starch, garlic, oregano, smoked paprika and mix.
Step 5
Add chopped red onion and chopped bell peppers.
Step 6
Spray cooking sheet and evenly distribute mixture. Salt and pepper to taste.
Step 7
Cook in oven at 450 for 30 minutes.
Step 8
In the same pan used to cook the bacon, add egg whites and cook through. Add salt and pepper to taste.
Step 9
Portion out mixture, eggs and bacon.
