Instructions

Salsa Verde

Step 1
Roast tomatillos until browned and slightly flattened in cast iron pan, about 10 minutes
Step 2
Roughly chop cilantro, peppers, garlic and onion while tomatillos are roasting
Step 3
Cut roasted tomatillos into wedges and place in blender or food processor with chopped veggies

Pescado

Step 4
Cut cod into fillets and season with salt and pepper to taste
Step 5
Mince garlic and add to a bowl with salt and pepper. Mix.
Step 6
Rub garlic seasoning over fish fillets
Step 7
Fill skillet with oil and bring to high temperature
Step 8
Add seasoned fish and fry through, about 3-5 minutes
Step 9
Remove fish from oil and set aside on paper towel

Presentation

Step 10
Pour salsa verde into skillet with oil, mix through
Step 11
Ladle salsa verde mixture into bowls
Step 12
Place cod fillets over salsa verde in bowl
Step 13
Garnish with cilantro
