1onion
2garlic cloves
2green chillies
deseeded and chopped
0.4 cmginer
sliced
1 Tbspcoriander
chopped, plus garnish
½ tspcumin
250glean lamb mince
50gbreadcrumbs
fresh
salt
pepper
Curry sauce
Instructions
Step 1
To make the meatball whizz the onion, garlic, chilli, ginger and 1tbsp chopped coriander in a food processor. Add the grand cumin, lamb mince, breadcrumbs and seasoning and pulse until just mixed.
Step 2
Shape into 20 small meatballs and chill covered for 30 mins
Step 3
For the sauce heat a large lidded non stick pan and add the oil and soften the onion for 5-10 mins
Step 4
Add the spices and cook for 30 seconds then sir in tomatoes and stock. Simmer and gradually stir in the yoghurt.
Step 5
Slide in the chilled meatballs and push into the sauce. Cover and simmer for 30 ins shaking the pan from time to time to move the meatballs around.
Step 6
Serve garnished with chopped coriander and chopped tomatoes, or pomegranate seeds / almonds.
