Instructions

Step 1
Preheat oven to 350°
Step 2
Season chicken breasts on both sides with garlic powder, salt, and pepper.
Step 3
Carefully cut each breast horizontally in half, but not all the way through to create a pocket for the filling.
Step 4
Layer slices of mozzarella and tomato inside the pocket, then top the mozzarella and cheese with basil leaves
Step 5
Fold the top chicken layer over the filling and pin the chicken together with toothpicks. (its ok if some of the filling is poking out)
Step 6
In a large oven safe skillet over medium heat, heat the olive oil. Place the stuffed chicken breasts in the skillet and cook for 5 minutes on each side, and has a nice sear.
Step 7
Transfer the skillet into the oven and bake for 12-15 minutes, or until the chicken is cooked through.
Step 8
Drizzle with balsamic glaze and serve immediately.
