Instructions
Step 1
Put the lentils in 600ml of cold water. Add the turmeric and bring to the boil. Remove any of the froth from the top of the mix.
Step 2
Fry the onion until golden brown. Add the ginger and garlic and fry for a further 3 minutes. Add all the remaining spices and cherry tomatoes and cook for about 2 minutes until aromatic.
Step 3
Once the lentils have absorbed most of the water, add to the onion and spice mix.
Step 4
Add in the coconut cream and simmer until it's reduced to your liking.
Step 5
With about 5 minutes left, add the sultanas and flaked almonds.
Step 6
Serve with paratha and brown rice.
