Instructions

Step 1
1: Add a splash of oil into a pan then cook the diced chicken over a medium – high heat for 4-5 minutes until golden then remove from the pan and set aside.

2: Fry the onion in a dash of oil for 5 minutes then add in the garlic and cook for a further few minutes. Add in the paprika and tomato puree then stir through to cook for a couple of minutes, pour in the chopped tomatoes and stock. Bring up to a simmer then add the chicken back in along with the olives and peppers, cook for a further 10-15 minutes. Garnish with fresh parsley.
