These gluten free buckwheat pancakes are a nutrient dense favorite in my house! These will set you up with sustainable energy for the day and leave your cells happy!

Instructions
Step 1
Preheat 1/2 tbsp butter or other saturated fat (high heat oil) in a frying iron pan on medium.
Step 2
Mix all batter ingredients together and let it sit for 5 minutes while the pan gets hot.
Step 3
Pour batter in pan (it should sizzle) and let cook until the very edges begin to dry out or little bubbles start coming up (about 40-60 seconds) then flip and cook until you can press on the top and it springs back (60-80 seconds).
