Instructions

Marinade the chicken

Step 1
Marinade the chicken with salt and ground black pepper x at least 30mins

Ground Masala Making

Step 2
Toast the "Ground Masala" spices over medium heat until fragrant then grind, transfer to bowl add vinegar and jaggery and mix into stiff paste

Make the Gravy

Step 3
Heat up ghee in pot over medium, add pinch of hing, cook for 10s, then add garlic/ginger, cook for 30s, then add minced onion and tomato. Cook down for 4 minutes, add turmeric and ground masala paste. Cook until oil seeps out.

Combine it all and let it cook

Step 4
Cook the chicken to an internal temp of 165, add methi and garam masala and cook for 3 more mins, then add fresh cilantro and take off heat

Serving

Step 5
Serve with rice. Optionally add diced zucchini, eggplant, broccoli, carrot, potato or any vegetable before/after adding the chicken (depending on it's cooking time).
