Ingredients

2skinless chicken breasts
cooked, shredded into pieces
2 ½ cupsmarinara sauce
or try our homemade spaghetti sauce recipe
4 cupsgluten-free pasta
favorite, cooked
1 cupfrozen spinach
thawed
1 cupparmesan cheese
shredded, or dairy-free alternative
⅓ cupcornmeal
gluten-free breadcrumbs
½ teaspoondried oregano
½ teaspoondried basil
Instructions
Step 1
Preheat oven to 350° F.
Step 2
In a large bowl combine sliced chicken, cooked pasta, spinach, marinara sauce and 2/3 cup parmesan cheese.
Step 3
Mix until combined.
Step 4
Spread the pasta in a 8x8 casserole dish.
Step 5
Spread breadcrumbs over pasta. Sprinkle remaining cheese on top.
Step 6
Cover casserole dish with foil. Bake for 30 minutes. Remove foil and bake uncovered for another 10 minutes for cheese to brown and casserole is bubbly.
