Bean bean curry Naan bread Tacos

Instructions

Step 1
Add the warm water, yeast and sugar to a container, stir and leave to react for around 10 mins.
Step 2
Into a mixing bowl add in the flour, salt, egg, vegetable oil and yeast mixture and mix until it forms a dough, once the dough has formed knead for around ten minutes, place into a lightly oiled bowl and cover with plastic wrap and leave in a warm place for an hour or has doubled in size.
Step 3
Place a sieve over a bowl and separate the baked beans from the sauce (retain the Sauce for use later)
Step 4
Add 1 tbsp of vegetable oils to a large frying pan and add in the onions and cook until translucent.
Step 5
stir in the garlic and ginger paste and cook for 1 minute.
Step 6
Add in the spices, curry powder, Tandoori masala, coriander powder, garam masala, kasoori methi, and cumin powder and stir.
Step 7
to stop the spices from burning add 50ml of hot water and stir.
Step 8
after around 1 minute add in the baked bean sauce and stir.
Step 9
Drain the butter beans and stir them into the pan.
Step 10
next, add in the sieved baked beans and stir.

add in another 50ml of hot water and stir.
Step 12
add in the freshly chopped coriander leaves and stir.
Step 13
leave to simmer on low heat for approx. 5 minutes then turn off the heat.
Step 14
Retrieve the dough from its warm place and knead for 1 minute.
Step 15
Divide the dough into 16 small balls.
Step 16
Using a roller roll the dough balls out to form flat discs the size of a side plate.
Step 17
heat a frying pan add a little oil and place the naans into the pan one at a time. leave the naan until the bubbles start to appear, once this happens to check the underside and when they are brown flip over and cook on the other side, remove from the pan and place on a plate, then repeat with the other 15.
Step 18
Once all the naans have been cooked mix 2 tbsp of butter,1 tsp olive oil and 5g of chopped coriander leaves and 1 tsp of crushed garlic together and then melt in the microwave.
Step 19
Brush one side of the naan with the garlic butter.
Step 20
Reheat the bean curry.
Step 21
mix the greek yoghurt, mint sauce and sugar and set aside
Step 22
Place the garlic naan on a place buttered side up, add a large spoon of the bean curry to the centre of the naan, sprinkle with some freshly chopped coriander and on a dollop of mint yoghurt, and serve, lick your lips and enjoy
