Simple, Steamed Mediterranean Cod

This is a quick and easy dinner. This is so simple and quick to make. You will need 2 large greaseproof paper squares to wrap the fish in to steam.
Choose from green beans, broccoli, cabbage or sugar snaps as a side.
If you have a jar of pesto open, you can add a little pesto to the fish too for extra flavour.

Step 1
Preheat the oven to 180C.
Step 2
Pop your courgettes in a bowl, drizzle a little oil over them, season and sprinkle the oregano on them.
Step 3
Cut your greaseproof square, and split the courgettes between the two squares placing them in the middle of the paper.
Step 4
Season your fish and place the fish on top of the courgettes. Then, place a couple of slices of lemon on top of the fish, then do the same with the tomatoes, olives and sprinkle with the feta (it's okay if these fall to the side).
Step 5
Drizzle a little olive oil on top and fold the paper around the ingredients to form a little tent. Pop in an ovenproof dish and Cook in the oven for 15 minutes.
Step 6
Serve up wit your choice of greens!
