Instructions

Step 1
Sprinkle the full packet of yeast on warm water in mixing bowl, then stir to dissolve.
Step 2
Add sugar, salt and stir to dissolve in the yeast water. Then, add flour and knead dough until smooth and elastic.
Step 3
Let rise at least 1/2 hour, or until risen by 30%
Step 4
While dough is rising, mix the baking soda water bath. 2 cups warm water and 2 tbsp baking soda.
Step 5
After dough has risen, take a segment of the dough and roll into a fairly long rope (about 1/2 inch diameter) and shape, or cut for bites.
Step 6
Dip prepared pretzel dough in soda solution and place on baking sheet silpat.
Step 7
Allow pretzels to rise again.
Step 8
Bake in oven at 450 for about 10 minutes or until golden.
Step 9
After you brush with butter sprinkle with rock salt for classic salted pretzels.
Step 10
For Cinnamon Sugar, toss in a mixture of 1 tbsp of cinnamon and half cup brown sugar.
Step 11
Dip the pretzel into the butter (or using a fat free cooking spray as the other alternative offered), coating both sides generously.
Step 12
Then dip again into the cinnamon mixture.

For Cinnamon Sugar

Step 13
For Cinnamon Sugar, make a mixture of 1 tbsp of cinnamon and half cup brown sugar.
Step 14
Dip pretzel in melted butter and shake off excess
Step 15
Toss in cinnamon sugar powder.

For Salted

Step 16
Shake rock salt on pretzel before baking.
