Ingredients

2 Tbspcooking oil

2 lbsstew beef
diced small
2 tspsalt
1 tsppepper
1 tspginger
1 tspitalian herbs
1 tspcinnamon
½ tspground anise
3 oztomato paste
5 cupsstock
chicken, beef/veggie
12 ozmixed vegetables frozen
1potato
large, peeled and diced small
½ cuppesto sauce
chilli flakes

Instructions
Step 1
In an instant pot or pressure cooker, sautée the meat and onions with all the spices until fragrant and starting to brown.
Step 2
Cover the meat with stock of choice and bring to a boil. Then close the lid and pressure cook for 30 minutes on high (or if boiling without a pressure cooker boil for 2 hours until the meat is tender.
Step 3
Once done and the meat is soft, add the mixed vegetables and potatoes to the pot and let it simmer for 15-20 minutes until the potatoes are soft.
Step 4
Add pesto sauce to the soup and mix well.
Step 5
Enjoy over a carb of choice like rice, pasta, bread or couscous ❤️
