Italian Beef Stew

Instructions

Step 1
Cut beef into one inch cubes and sauté with onions and olive oil in 2 batches

Mix all seasonings together and stir into pot until they are golden.

Deglaze the caramelized bits with red wine

Stir in tomato paste

Add broth

Cook on pressure cook for 20 minutes, then quick release.

Add potatoes and pressure cook for 5 minutes, then quick release.
Step 8
Add celery and carrots and pressure cook for 2 more minutes. Then quick release.
Step 9
Remove 1/2 cup of liquid and create a slurry with the flour. Turn pot to saute and add back to pot stirring bottom for 2 minutes to cook out the raw flour flavor and to prevent burning.
Step 10
Taste test to adjust seasonings
