My go-to recipe for chilli. It's adaptable and changes depending on the mood I'm in when I make it.

Instructions

Step 1
Cook the onions and garlic in a little oil to soften them and release their flavours.
Step 2
While they're cooking, make a mixture of your seasonings.
Step 3
Once your onions have softened a little, make a well and add the mince, giving it contact with the bottom of the pot, then immediately start separating it with your wooden spoon.
Step 4
Add the beef stock cube(s) and half of your seasoning powder mixture.
Step 5
Stir the whole pot, mixing the onions, garlic, beef and seasoning.
Step 6
Stir until the mince is browned, with no pink showing.
Step 7
Add your peppers, chillies and vinegar (if you're adding vinegar).
Step 8
Once your peppers and chillies have been mixed in, add your chopped tomatoes and passata, then stir it through.
Step 9
Add your grated veg (if you're adding it) and stir it through.
Step 10
Cook with the lid on, stirring every 10 minutes or so, for approximately 90 mins. (You can cook for less time, but it's good to let the flavours mingle).
Step 11
You can take the lid off to thicken the sauce, as the escaping steam and regular stirring will aid in allowing the water to escape. Just be careful nothing burns to the bottom.
Step 12
If you're adding chocolate, add it 10 minutes before serving.
Step 13
Serve with rice or on a baked potato!
