Ingredients

Chicken Marinade
800gChicken Breast
3 Tbspnatural yogurt
2garlic cloves
minced
1 Tbspginger minced
1 tspcumin
1 tsptumeric
1 tspchilli powder
2 tspsgaram masala

Instructions
Step 1
Place chopped chicken in a large bowl, add spices, yogurt and season well. Leave to marinade for at least 30 mins but overnight if you can.
Step 2
Heat olive oil in a large pan, add marinated chicken, cook until just cooked and remove.
Step 3
Add butter and melt over a low heat so it doesn't burn, add onion and cook over a low heat for 5-7 mins until softened but not coloured. Mix in ginger & garlic for 1 min.
Step 4
Pour in spices and mix through. Add tomatoes, season and simmer for 15 mins until thickened.
Step 5
Mix through sugar and pour sauce into a large jug and blend with a hand blender for a smooth sauce. This is optional, you can leave as is too if you prefer but I like a smooth sauce for this recipe. Return sauce to the pan if you blend.
Step 6
Pour in cream, mix through, add chicken back in and combine with sauce.
Step 7
Sprinkle with fresh coriander and serve with basmati rice.
