Instructions
Step 1
In a small mixing bowl combine egg whites, spinach, bell pepper, onion and jalapeno and mix together vigorously. You'll want this mixture ready to pour right into your dash mini waffle maker.
Step 2
Spray the top and bottom of your waffle maker with non-stick cooking spray and pour in 1/2 of the mixture. It should be just enough to lightly cover the bottom area.
Step 3
Close the waffle maker and let it cook for 3-4 minutes; if needed cook an additional minute.
Step 4
Carefully remove first waffle omelette from your waffle maker and set aside. Respray your waffle maker and pour in remaining mixture. Once again let it cook for 3-4 minutes and an additional minute if required.
Step 5
Top with avocado and salsa if desired.
