Pea, green bean and coconut curry

Instructions

Step 1
Place the diced potatoes in a bowl and rinse with cold water.
Step 2
Heat oil in a large pan and add the onion and garlic, fry on a medium heat for 2-3 minutes.
Step 3
Add all the spices to the pan, stir together and continue to fry for another 1 minute.
Step 4
Drain the potatoes and add them to the pan, stir to coat the potatoes in the spicy onion mixture.
Step 5
Add the 250ml of water to the pan and turn up the heat to boil and then simmer on a medium heat for 15 minutes.
Step 6
Add the green beans to the pan and stir, then simmer for a further 5 minutes.
Step 7
Stir in the coconut cream and peas and simmer for a further 4-5 minutes.
Step 8
Serve with a garnish of chopped coriander and a slice of lime with either chapatti or rice.
