Hummus. This recipe makes about 2 large plates of hummus which is about 3 cups of hummus.

Step 1

Soak dry chickpeas overnight 12-24 hours
Step 2

Boil chickpeas for an hour or two
Step 3

Drain the water
Step 4

In a separate bowl add 1 cup water, 3 tbsp lemon juice, and 2 tsp salt

Use food processor to blend the boiled chickpeas
Step 6

Add 3/4 cups tahini paste
Step 7

Add the water, lemon juice, and salt mixture
Step 8

Add 1/2 cup olive oil
Step 9
Add 2 tsp cayenne pepper
Step 10
Put hummus on a plate and decorate with sumac and paprika powder
Step 11

Top with olive oil
Step 12

And serve with pita bread
