Steak Marinade
10golive oil
lime juice
1 Tbspgarlic
2 Tbspcumin
1 Tbsppaprika
2 tsporegano
½ tspchipotle chili powder
1 Tbspsalt
1 lbsFlank Steak
Queso Sauce
0.5red onion
diced
50gcorn
80gfire roasted diced tomatoes
40ggreen chiles
diced
20gpickled jalapenos
50gred enchilada sauce
150g2% plain greek yogurt
50gcheddar cheese
30g1/3 fat cream cheese
garlic powder
cilantro

Instructions
Steak
Step 1
Add in all steak marinade ingredients
Step 2
Add steak to marinade and allow to marinate for 1 hour
Step 3
Broil steak at 475 for 9-10 minutes then let rest.
Queso Sauce
Step 4
Cook down red onion in a pan on medium heat
Step 5
Add in vegetable mix and allow to simmer for 5 minutes
Step 6
Add in enchilada sauce and allow to simmer for 5 minutes more
Step 7
Add in cheese, cream cheese, and Greek yogurt. Top with garlic powder and cilantro and mix well.
Finishing
Step 8
Chop the steak and add it to the pan with the queso mixture and mix well.
Step 9
Optional: place on top of a bed of rice of your choosing.
