Step 1
Saute onion & pepper in canola or other oil until softened. Add rice & stir until coated. Add garlic & cook until fragrant. Add rest of ingredients, cover & simmer around 15 minutes, as you would plain rice. Dump eggs on top of rest. Add peas when cooking is almost complete.
